Chocolate Chip Muffins

I have shared quite a few muffin recipes in this blog, but i have not shared the basic few muffins yet, like vanilla, chocolate, chocolate chips, chocolate chocolate chips like that..So i decided to make them and share it..My first trial is a basic eggless chocolate chips muffins and it turned out perfecto!

Oats Bran Muffins

These muffins had the perfect crunchy chocolaty top and moist and fluffy interior. Loved it, so much. Instead of chocolate chips you can use any nuts or simply skip the chocolate chips in this and make it plain vanilla muffins as well..Will soon share different muffin recipes.

Ingredients for Chocolate Chip Muffins

  • All Purpose Flour / Maida - 1 ½ cup / 180 grams
  • Sugar - ¾ cup / 150 grams
  • Oil / Melted Butter - ½ cup / 120 ml
  • Vanilla Essence - 1 tsp
  • Baking Soda / Cooking Soda - ½ tsp
  • Baking Powder - 1 ¼ tsp
  • Thick Curd / Yogurt - 1 cup / 240 ml
  • Chocolate Chips - ½ cup
  • (My 1 cup measures 240 ml)

How to make Chocolate Chip Muffins

  1. Preheat oven to 180 degree C. Line a muffin tray with cupcake cases.
  2. Take curd, sugar, oil, vanilla in a bowl. Whisk it well.
  3. Add in baking soda and baking powder and whisk it up. It will turn foamy and frothy.
  4. In goes flour and fold gently.
  5. Add in chocolate chips and fold gently.
  6. Scoop the batter into moulds using ice cream scoop, Sprinkle some chocolate chips on top.
  7. Bake them 20 to 25 mins or insert a toothpick to see whether it is cooked, if it comes out clean then it is done.
  8. Remove them and let it cool completely.
  9. Serve.

Notes:
1)It is best to make half the batch of this if you have only 6 cup muffin mould because if you let the batter sit for a while then it may not rise that much.

Ingredients

  • 1 ½ cup / 180 grams All Purpose Flour / Maida
  • ¾ cup / 150 grams Sugar
  • ½ cup / 120 ml Oil / Melted Butter
  • 1 tsp Vanilla Essence
  • ½ tsp Baking Soda / Cooking Soda
  • 1 ¼ tsp Baking Powder
  • 1 cup / 240 ml Thick Curd / Yogurt
  • ½ cu - ½ cup Chocolate Chips
  • My 1 cup measures 240 ml

Instructions

    @Anonymousafter it cools, store it in a container outside for 2 days in fridge for more than a week. u can warm it in microwave for few sec, it will turn as beautiful as freshly baked.

    I made muffins couple of time but both times they failed.
    taste was good . after 15 mins the expanded but after removing them from oven they shrinked and were not fluffy.
    please tell where I went wrong.

    Hi Aarthi,

    I followed your recipe exact, but my cake or muffin or paneer seems to get a little harder and chewy on the outside with the same temperature you mention. But the inside is soft and good. What do i do for a soft outside? reduce the temperature to 150 and cook a little longer time? will that help? I use Morphy OTG!

    Don't know where I am going wrong 🙁

      DOnt over mix the batter. Once the muffins comes out from oven, brush the top with some milk.

    Hi Aarthi, I make these muffins with whole wheat aata, and they turn out perfect!! I just add a few spoon of milk to get the consistency right. That's for the recipe. 🙂
